After hours and hours of troubleshooting we made a decision we were hoping to have more time to do-- we've moved servers!
Our downtime and issues were caused by an issue on our previous host that was beyond our control. Ugh!
But we had planned to move to a new server for a while.. we just wanted to do it on our own time, not rush into it.
We are now running great on the new server and the 500 errors and site bouncing around should be done with!
